101 Dalmatians Mini Cheesecakes
- 1 1/2 cup crushed graham crackers
- 1/4 cup packed light brown sugar
- 8 tablespoons of unsalted butter (melted)
- 2 1/4 cups heavy cream
- 1 pound cream cheese, softened
- 2/3 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 1/2 cups chocolate wafer cookies, crushed
- Black fondant
In a large mixing bowl, combine graham cracker crumbs, brown sugar, and melted butter. Mix until combined.
Press mixture into springboard pans to create pie crust.
In a separate mixing bowl, beat heavy cream until medium peaks form.
