Ingredients

  • Large banana
  • Small handful gluten-free black jellybeans
  • 1 tablespoon melted cacao butter, plus a little extra for sealing the banana sections
  • 1/2 cup gluten-free confectioners’ sugar
  • Pinch of salt
  • 2 1/2 teaspoons water
  • 2 or 3 drops vanilla extract
  • 3 wooden popsicle sticks
  • Freezable sealable container lined with wax paper
  • Small microwavable container
  • Pastry brush

Directions

  1. Peel the banana. Cut off the very tips and then slice the remainder into 3 equal lengths. Insert a popsicle stick into the cut end of each length. Freeze the banana pops in the sealable container for at least two hours or overnight. (You want them to be frozen solid when you coat them.)

  2. During the last 15 minutes of the freezing time, carefully slice the jellybeans in half (some vertically and some horizontally) to create Dalmatian “spots” of varying sizes. Set aside.

  3. To prep the pops for the white chocolate, first use a pastry brush to coat the entire surface of the fruit with melted cacao butter and then return them to the freezer for another 15 minutes or so. This will seal the fruit and make it easier for the chocolate to stick.

  4. Next, prepare the white chocolate by stirring together the melted cacao butter, sugar, salt, water, and vanilla extract in a small bowl until well mixed and smooth. (Note: To melt cacao butter, microwave it for 10 – 20 second intervals until it is nearly all melted. Then, stir with a wooden spoon to liquefy the rest of it.)

  5. Remove the pops from the freezer. Working with one at a time, use the spatula to spread the white chocolate on each piece of fruit and then press the jellybean pieces into the coating. You’ll need to this pretty quickly because the white chocolate will begin to dry as soon as it comes in contact with the frozen fruit.

  6. Return the pops to the freezer for another 10 minutes or so, and serve them immediately before eating (once frozen, bananas will instantly turn mushy if you allow them to thaw).
