The big hero of this meal is a Baymax-shaped whole wheat chicken quesadilla, complete with red pepper armor and a Mini Babybel® cheese head. The side dishes are so nutritious that any personal healthcare companion would be proud. Power up with the power greens salad, and give a blast of flavor with the medley of energy orbs (aka balled fruit).

Baymax Power Up Bento Box


  • 1 Mini Babybel cheese in wax
  • 2 raisins
  • 2 6-inch whole wheat tortillas
  • ¼ cup cooked pulled chicken
  • 2 Tbsp Mexican cheese, low-sodium
  • 1 red pepper
  • 3 slices purple cabbage
  • 2 honeydew melon balls
  • 2 cantaloupe melon balls
  • 2 red grapes
  • 2 green grapes
  • ½ cup kale
  • 3 cherry tomatoes
  • 1 Tbsp dried strawberries
  • 1 Tbsp dried cranberries
  • 1 tsp avocado dressing (on the side)
  • 1 tsp fresh lemon juice
  • 8 oz. skim milk

  1. Carefully cut the red pepper into power armor shapes.

  2. Place the cooked chicken and Mexican cheese between two tortillas. Cook on a lightly oiled pan on medium-high heat until the sprinkled cheese is melted and the tortillas are golden brown (about 3­–4 minutes per side).

  3. Using a knife, cut the quesadilla into the shape of Baymax’s body.

  4. Use the pull-tab on the Mini Babybel cheese to peel a rectangular section of wax off of the cheese to look like Baymax’s helmet.

  5. In the biggest section of your bento box, assemble Baymax: Set down a bed of purple cabbage and the quesadilla, then cover with the red pepper armor and add more cabbage on his midsection. Place the Mini Babybel head, and use raisins for his eyes.

  6. Power Greens Salad: Toss the kale in lemon juice, then place kale, cherry tomatoes, and dried fruit together in a side bento box compartment. Serve with avocado dressing on the side.

  7. Energy Orbs: place balled fruit and grapes in a side bento box container.

  8. Serve with milk and enjoy!
