Meet Your New Favorite Dessert: Donald & Daisy Cheesecake

No-bake cheesecakes are an easy and delicious snack my boys love. Bonus: they can be made with the whole family. As expected, my kids’ favorite step was smashing biscuits for the crust.

They’re great for kids parties, baby showers, or just a special treat. Follow this recipe to find out how you can turn your mini cheesecakes into adorable Tsum Tsum Donald and Daisy!

Donald & Daisy Cheesecakes

Ingredients

  • Mini cake rings
  • 15 tea biscuits or cookies, crushed
  • 4 Tbsp unsalted butter, melted
  • 2 Tsp (1 packet) powdered gelatin
  • 2 Tbsp cold water
  • 2 (8-Oz.) blocks of cream cheese, softened
  • 1 1/2 Cups plain Greek yogurt
  • 3/4 Cup sugar
  • 1 Tbsp vanilla bean paste
  • 1/2 lemon, juiced
  • Pink, yellow, black, red, and blue food coloring
  • Toothpicks
  • White and milk chocolate
  • Piping bags
  • Scissors

Helpful Tip

All cutting should be done by an adult.

Directions

  1. Line a plate or tray with parchment paper and place mini cake rings on it. Combine crushed biscuit crumbs and melted butter together in a mixing bowl. Divide up the biscuit crumbs and press onto the base of each cake tins. Chill in the refrigerator for later use.

  2. Place the gelatin in a heatproof bowl with the cold water. Let it sit for 5 mins. Using a food processor, blend cream cheese, yogurt, sugar, vanilla paste, and lemon juice until it is smooth.

  3. Heat gelatin powder mixture in a double boiler until melted and add to cream cheese mixture. Blend well.

  4. Pour the mixture into the cake tins. Refrigerate for half an hour.

  5. Divide up the remaining mixture into 3 portions, color them yellow, pink, and black with food coloring.

  6. Working with one cheesecake at a time (keep the remaining cheesecakes in the fridge), dip a toothpick into the colored mixture to draw Donald and Daisy’s features.

  7. Melt white chocolate in a microwave or over a double boiler, divide into three portions, and color them red, blue, and pink. Fill into piping bags, and cut a small hole in a corner.

  8. On a tray or plate lined with parchment paper, pipe out Donald’s hat and bow tie, and Daisy’s bow. Leave to harden. Place them onto the cheesecake.

  9. Melt white chocolate in a microwave or over a double boiler, fill into piping bag, cut, and pipe out the ribbon on Donald’s hat. Then add to cheesecake.
