While inside Riley’s head in Inside Out we learn that it takes all kinds of emotions to make up your mind, and just how important each one is. With these homemade funfetti cakes, you don’t have to choose a favorite.

Slice up individual pieces of cake and top each one with frosting and sprinkles to represent Joy, Sadness, Disgust, Fear, and Anger. We love that the colorful sprinkles on the inside also make a statement on the outside.

Inside Out Cakes

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/3 cup sour cream, light is okay (or plain Greek yogurt may be substituted)
  • 1/4 cup canola or vegetable oil
  • 2 teaspoons vanilla extract
  • 1/2 cup sprinkles, or to taste
  • Extra sprinkles or colorful decor in assorted colors
  • Vanilla frosting

  1. Preheat oven to 350°F. Line an 8″ x 8″ inch baking pan with aluminum foil, spray with cooking spray; set aside.

  2. In a large bowl, whisk together flour, granulated sugar, and baking powder; set aside.

  3. In a separate small bowl, whisk together the egg, buttermilk, sour cream, oil, and vanilla.

  4. Add the wet mixture to the dry, mixing lightly with a spoon or folding with a spatula until just combined. Small lumps will be present, don’t overmix or try to stir them smooth.

  5. Gently stir in sprinkles. Be careful not to over-mix or they could bleed.

  6. Scoop batter out into prepared pan and bake for about 30 minutes or until the center is set, and a toothpick inserted in the center comes out clean or with a few moist crumbs—but no batter.

  7. Place pan on a wire rack and allow cake to cool.

  8. Slice cake into 2.5″-3″ squares.

  9. Smooth frosting lightly onto cakes with a spatula or offset knife.

  10. Sprinkle one color of sprinkles onto each piece of cake.
