My whole family loves pizza—we have it for dinner at least once a week. To celebrate our favorite meal, we created pizza for dessert and put a Mickey & Friends spin on it!
This dessert pizza is created entirely with meringue. Baked meringue is wonderfully light and crunchy and can be served on its own, or as a pavlova with whipped cream and berries.
Mickey & Friends Pizza Meringue
- 2 1/2 Oz. egg whites
- 6 1/2 Oz. caster sugar
- Gel food coloring (black, sky blue, green, yellow, beige, red, pink)
- Whipped cream and fresh berries (optional)
- Craft paper
- Parchment paper
- Handheld or stand mixer
- Piping bags
All cutting should be done by an adult.
Preheat oven to 185° F.
Cut out a circle that’s about 3″ in diameter using the craft paper. Cut the circle into 6 even portions and place on the baking tray.
Place the parchment paper over the templates.
Using the mixer, beat egg whites until foamy. Add in sugar gradually while beating on high speed continuously, until stiff peaks form.
Tint the meringue mixture using gel food coloring until desired shade is achieved.
Pipe out pizza slices with Tsum Tsum characters and smooth out any “peaks” using the toothpicks.
Bake for 90 minutes.
Serve immediately with whipped cream and fresh berries, if desired. Or, store in an airtight container if not using immediately.
