Celebrate the summer season by making these Mickey Strawberry Shortcakes! You’ll be surprised by how easy it is to make homemade biscuits and whipped cream. We added some magic to this classic recipe by cutting the dough with a Mickey cookie cutter. Strawberries make a delicious choice, but you can also use other berries or ripe peaches. You’ll want to make this recipe a dozen times before the summer is over!
Mickey Strawberry Shortcake
- 1 cup strawberries
- 1/4 cup sugar
- 2 cups flour
- 4 tsp sugar
- 1/4 tsp salt
- 2 1/2 tsp baking powder
- 1/2 cup plus 1 Tbsp softened butter
- 1 1/2 cups whipping cream
- 1/4 tsp vanilla extract
- Mickey cookie cutter
Slice the strawberries and place in a bowl. Mix in 1/4 cup sugar and let sit for 30 minutes.
Preheat oven to 450 degrees F.
In a large mixing bowl, sift together flour, 4 teaspoons sugar, baking powder, sugar and salt. Add in 1/2 cup butter and mix until crumbly. Add 3/4 cup cream and mix to a soft dough. Knead dough for one minute on a lightly floured surface.
Roll dough out to 1/2 – inch thickness. Use a Mickey cookie cutter to cut out shapes. Place shapes on a lined baking sheet. Melt remaining 1 tablespoons butter and brush on shapes. Sprinkle with a little sugar if desired.
Bake for 10-15 minutes, or until golden brown. Let cool.
Beat remaining cream until thickens. Add vanilla and beat again until thick.
Slice the shortcakes in half, lengthwise. Top with a spoonful of cream and berries. Cover with top half. Add more cream and berries if desired. Serve immediately and enjoy!
