Mickey Taco Cone
- 1 1/2″ circular pastry cutter
- Parchment paper
- Taco ingredients: meat, beans, sour cream, salsa, guacamole, lettuce, tomatoes, onions, etc.
To create ears: using pastry cutter, cut out circles from a tortilla. Coat pan with oil and heat. Once hot, fry tortilla circles for 15-20 seconds on each side.
To make cone: Lay a tortilla on a microwave-safe plate and sprinkle cheese on top. Try to get most of the cheese towards the outer edges of the tortilla. Then place tortilla in the microwave for about 30 seconds (or until cheese is melted).
While the cheese is still hot, shape the tortilla into a cone, rolling the ends towards each other and pressing to seal the edges.
Stuff parchment paper inside to help the tortilla hold its shape.
Seal up the bottom of your cone by sprinkling cheese near the tip of the taco cone. Then microwave for 30 seconds (or until cheese is completely melted) and fold bottom upward.
Let each cone sit for at least 5 minutes before removing parchment paper.
Fill cone with taco filling and toppings. Then place crispy Mickey ears on top.
