Imaginary friend or not, we love the idea of cooking with Elliot the dragon. Re-imagine the classic peanut butter and jelly combo by turning it into a cobbler! This delicious Pete’s Dragon-inspired PB&J Cobbler is sure to be a hit with your kids and your tastebuds!

Pete’s Dragon PB&J Cobbler
- 1 cup sugar (1/2 cup for cookies, 1/2 cup for cobbler)
- 1/2 cup water
- 2 tablespoons cornstarch
- 2 cups quartered strawberries
- 1/2 cup butter, diced
- 1/2 cup brown sugar
- 1 egg
- 1/2 cup peanut butter (crunchy or smooth)
- 1/2 tsp vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 1/2 cups flour
Cover baking dish with aluminum foil to prevent burning.
Preheat oven to 400 degrees.
Butter a 2-quart baking dish.
Combine 1/2 cup sugar, 1/2 cup water, and cornstarch into a saucepan.
Cook over medium heat, stirring constantly, until thickened.
Stir in strawberries. Remove from heat.
Transfer cobbler into a baking dish. Add butter on top.
Bake in 400 degree oven for 20-25 minutes.
In a separate bowl, combine 1/2 cup sugar, brown sugar, 1 egg. Mix well.
Add peanut butter, vanilla, salt, and baking soda. Mix well.
Continue mixing and add in flour, 1/2 cup at a time.
Spoon dough onto wax paper. Crosshatch each dough ball with a fork.
Remove cobbler from oven. Top with cookie dough and sprinkle with sugar.
Turn oven down to 350 degrees.
Bake for 10 minutes until cookies are golden.
Let cool before serving. Enjoy!
