Randy Boggs Monster-in-the-Making Sandwich Cookies

Who’d have thought that Mike and Sully’s biggest competitor for the coveted post of Top Scarer at Monsters, Inc. was once shy and endearing? In fact, when the lizard-like Randall first arrived at Monsters University, he was embarrassed by his ability to turn invisible until Mike pointed out that it was an asset — the only glitch being his glasses, which appeared to hover midair when he disappeared.

This Halloween, pay ode to the sweet student (a.k.a. Randy), who was just learning the tricks of being scary, by transforming a batch of cookies into sweet bespectacled treats.

  • Pre-made cookie dough
  • Purple cookie icing
  • Marshmallows
  • Green taffy candies
  • Mini brown candy-coated chocolate candies
  • White cookie icing
  • Purple taffy candies
  • Disposable kitchen gloves (for shaping the taffy)
  • ½-inch round fondant cutter
  • Toothpicks
  • Small strips of purple paper
  • Clear tape


  1. Heat the oven to 350°F. On an ungreased cookie sheet, place the cookie dough rounds 2 inches apart. Bake 12 to 16 minutes or until the edges are light golden brown. Cool the cookies on the sheet for 2 minutes and then transfer them to a cooling rack to cool completely, about 10 minutes.

  2. Frost the cookies with purple cookie icing. Set them aside until the icing sets, about 1 hour.

  3. Meanwhile, make the eyes. For the irises, flatten a few green taffy candies to about 1/8 to ¼ inch thick, and use the fondant cutter to cut out two circles for each monster. Gently press a mini candy-coated chocolate onto the center of each iris. Use dabs of white cookie icing to stick each iris to the center of a marshmallow.

  4. For Randy’s “glasses,” roll pieces of the purple taffy candies into thin 4½ inch-long snakes and wrap one around each marshmallow, gently pressing the ends together to stick them in place. Set the eyes aside for now.

  5. When the frosted cookies are ready, turn half of them upside down and spread the unfrosted sides with white cookie icing. Place the remaining cookies on top, frosted side up, to create sandwich cookies.

  6. Use additional dabs of cookie icing to stick a pair of eyes atop each sandwich cookie. Let the icing set.

  7. Lastly, for each monster cookie, tape three short strips of purple paper to a toothpick and stick the end into the back of one of the marshmallow eyes. (Don’t forget to remove the toothpick before eating.)
