Superheroes meet incredible foods in this lunch. Power greens, fresh fruit, and Mini Babybel® 100% real cheese team up for a salad that packs a citrusy punch of flavor. But what about style? This lunchbox follows Edna Mode’s number one rule — no capes. Instead, miniature masks made of nori conceal the secret identities of the crackers and cherry tomatoes on the side.
With so many nutritional ingredients, this lunch is great for active kids who want to be fast like Dash or strong like Mr. Incredible. No promises on invisibility or stretching powers, though.
The Incredibles Lunchbox
- ¾ cup power greens salad, washed
- ¼ cup dried blueberries
- ¼ sliced orange
- ¼ slice mango
- 1 Mini Babybel cheese
- ½ cup cherry tomatoes
- 2 oz. whole wheat crackers, low-sodium
- 1 sheet of nori (dried seaweed)
- 2 tsp low-fat apple cider vinaigrette
- 8 oz. skim milk
All cutting should be done by an adult. Also, this recipe gets a Disney Check. It’s a quick and easy way for families to identify better foods and beverages that meet Disney’s nutrition guideline criteria, and helps kids and parents agree on better choices.
Take a sheet of nori. Using a knife, carefully cut out five mask shapes with eye holes. Base the size on the mask shapes on the size of the crackers and tomatoes you have.
Peel an orange and reserve two slices for the salad.
Slice a mango in the shape of the bottom of the Incredibles’ “i” logo.
Assemble the salad: In the largest container of your lunchbox, place a bed of washed power greens. Use the orange slices, dried blueberries, sliced mango, and peeled Mini Babybel to make the Incredibles’ logo on top of the bed of greens. Serve with vinaigrette on the side.
Place washed cherry tomatoes and crackers in the other containers. Put the nori masks on top of two crackers and three tomatoes.
Serve with milk and enjoy!
