Create Your Own Banana Cupcakes Inspired by The One and Only Ivan

Ingredients

  • CUPCAKES
  • 1 ½ cups flour
  • ¾ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • A pinch of salt
  • ¼ teaspoon cinnamon
  • 3 overripe bananas, mashed
  • 1 teaspoon vanilla extract
  • ¼ cup vegetable oil
  • 1 egg
  • TOPPINGS
  • Cream cheese frosting
  • White fondant
  • Food coloring gel: blue, green, yellow, orange, and black
  • Black edible marker
  • Sugar cookie dough, cut-out
  • Royal icing: white and black
  • Food-safe paintbrushes
  • Lemon extract
  • Toothpicks
  • Wax paper
  • Ruler

Helpful Tip

All cutting and baking should be done by an adult.

Directions

  1. Preheat the oven to 350˚F. Combine the dry ingredients in a bowl and set aside.

  2. In a separate bowl, combine the mashed bananas, vanilla, oil, and egg. Pour the wet ingredients into the dry ingredients, and stir together gently until just combined without any remaining dry spots.

  3. Fill lined cupcake tins two-thirds full, and bake for 20 minutes or until a toothpick inserted in the center comes out clean. Let cool.

  4. Prepare crayon colors by mixing food coloring into white fondant. Roll and shape the fondant into crayons. Use the edge of a ruler to create an indent near the crayon tip. For the wrappers, mix white fondant with a bit of colored fondant. Roll out very thinly, cut accordingly, then wrap around each crayon. Draw lines with a black edible marker.

  5. To make the easel cookies, start by drawing a template. I measured a rectangle with a 4 ½ cm x 6 ½ cm dimension, and cut legs to the bottom. Roll out your cookie dough to 1/8-inch thickness and cut out the shapes with a knife. You can freeze your cut-outs for 10 minutes to help retain their shape before placing them in the oven. Bake according to your recipe, and cool completely.

  6. Pipe a border around half of your cookie batch with black royal icing. You can leave the other cookies plain for the back of the easel. Let set, then pipe white royal icing with flooding consistency in the center. Let the cookies dry completely, or overnight.

  7. To create animal silhouettes, draw or print out images and place them behind wax paper. Dip a toothpick or scribing tool into black royal icing and trace the shapes. Let them dry.

  8. It’s now time to paint! Mix a few drops of coloring gel thinned with a bit of lemon extract into painting wells. Brush with light strokes on the white royal icing canvas. To add finer details, use a toothpick or fine-tip paintbrush. Let dry.

  9. Attach the silhouette animals to your art piece with a dab of royal icing. Next, press a plain cookie to the back of your painted cookie with an icing strip at the top to create a standing 3D easel.

  10. Pipe cream cheese frosting on top of your cooled cupcakes. Place the cookie easel and crayon on top. Enjoy!
