  • 1 Tbsp mashed avocado
  • 1/2 tsp lemon juice

  • 1/2 red bell pepper
  • 1/4 orange bell pepper
  • 1/4 yellow bell pepper

Helpful Tip

All cutting should be done by an adult. Also, this recipe gets a Disney Check. It’s a quick and easy way for families to identify better foods and beverages that meet Disney’s nutrition guideline criteria, and helps kids and parents agree on better choices.

  1. Using kitchen scissors, cut the bread into the shape of Rex’s head & body. Toast the bread (a toaster oven works best).

  2. Using a knife, cut the bell pepper into the shape of his head. Cut out a section for his mouth. Also, cut out the shape of his hands from the bell pepper.

  3. To create clouds, cut one mini Babybel cheese longwise. Then, cut different size semicircles for the clouds.

  4. Cut the second mini Babybel cheese longwise. Place the end of a straw to the piece of cheese to create Rex’s eyes. Then, use a knife to cut out his teeth from the same piece of cheese.

  5. Using kitchen scissors, cut out the black part of Rex’s eyes from a black olive. Then, use the scissors to cut out his nostrils and cheek crease from a leaf of spinach.

  6. Spread the toast evenly with a mixture of mashed avocado and lemon juice.

  7. Place Rex’s head atop the avocado toast, then arrange the cheese eyes & teeth, spinach nostrils & cheek crease, and hands atop the toast to complete his look.

  8. Using a knife, cut out banner flags from the bell pepper. You will need 4 yellow flags, 4 orange flags, and 8 red flags.

  9. Use the whole-wheat spaghetti noodles to create the pennant banners. Add the flags to the banner, alternating their colors.
